Detox Salad Recipe with Carrot Ginger Dressing

"This easy Detox Salad recipe is made with a rainbow of delicious ingredients that you can feel great about enjoying!  Plus, it’s topped with my favorite Japanese Ginger Carrot Dressing."

Ingredients:
DETOX SALAD INGREDIENTS:
  • 3 cups finely-chopped* kale leaves
  • 2 cups finely-chopped broccoli florets
  • 2 cups finely-chopped red cabbage
  • 1 cup matchstick (shredded) carrots
  • 1 cup roughly-chopped fresh cilantro leaves
  • 1/2 cup toasted slivered almonds
  • 1/3 cup thinly-sliced green onions
  • 1 avocado, peeled pitted and diced
  • 1 batch Carrot Ginger Dressing (see below)
CARROT-GINGER DRESSING INGREDIENTS:
  • 1 large carrot, peeled and roughly-chopped
  • 1/4 cup rice wine vinegar
  • 2 tablespoons avocado oil or olive oil (or any mild-flavored cooking oil)
  • 1 tablespoon finely-chopped fresh ginger
  • 1 tablespoon honey (or your desired sweetener)
  • 1 tablespoon white (shiro) miso
  • 1/2 teaspoon toasted sesame oil
  • Kosher salt and black pepper, to taste

This Cauliflower and Broccoli Detox Salad recipe from Chef de Home is a great salad to start your 2018 with. This is basically a filling salad with lots of antioxidants coming from a power combo of cauliflower, broccoli, kale, carrots, almonds and cranberry. The detox salad dressing tastes fresh and full of citrus goodness.

Ingredients:
  • Broccoli Cauliflower Detox Salad
  • 1/2 Cauliflower (shredded, or small chopped)
  • 3-4 Kale (leaves, thinly chopped)
  • 1/2 Cup Parsley (fresh leaves, small chopped)
  • 2-3 Carrots (shredded)
  • 1/4 Cup Almonds (raw, blanched, and peeled)
  • 1 tbsp Poppy Seeds
  • 3-4 tbsp Cranberries (naturally dried, unsweetened, or use fresh pomegranate seeds)
  • 1 Broccoli (head, shredded or small chopped)
Detox Salad Dressing:
  • 1 inch Ginger (grated)
  • 1/2 tsp Oregano (dried, or 1 tbsp fresh leaves)
  • 1-2 Lemon (or lime, about 3 tbsp juice and 1/2 tsp zest)
  • 2 tbsp Olive Oil
  • 1-2 tsp Honey (only use raw natural honey)

Want to make sure your fruits and vegetables are thoroughly clean before putting them on your salad? Dissolve a tablespoon of baking soda in a bowl of water and use this to rinse your produce.
